Joe's Basic Pancake Mix
I call this Joe's Basic Pancake Mix because it is a precursor to all sorts of variations. The variation may be adding bananas, peaches, pecans, chocolate chips or whatever else one might imagine tasting good in pancakes. The great thing about pancakes is that the basic flavor is complemented by many various add ons. Popcorn is the same way, but that is for another day.
Dry Ingredients:
1 1/4 cup flour, this may be whole wheat if you like
1/4 cup cornmeal
6 Tbsp powdered milk, try using plain powdered milk or powdered buttermilk
1 tsp salt
3 tsp baking powder
1/3 cup sugar, optional
Wet Ingredients:
1/3 cup vegetable oil
4 egg whites or 2 eggs (whip for fluffier pancakes)
1 cup (plus or minus) water or milk, add gradually to get a smooth consistency.
Mix the wet and dry seperately and then together. Carefully add more water or milk to gain the right thickness of the batter. It is up to your judgment based on the thickness of the batter you like. It is best to make one or two test pancakes.
Cook on medium heat and enjoy. These easily feed a family of four. Refrigerate or keep cool any left over batter for the next day. It may be necessary to add a 1/2 tsp baking powder the second day.
Optional filling(s):
Banana, Peach and Strawberry Filling:
For a family of four: Chop 1 ripe banana, 3 ripe juicy peaches and 3 to 4 red ripe strawberries. Mix these together in a bowl.
I like to put this mix into the pancake while it is cooking on its first side just before it is ready to turn over. Spoon up the mix and place about 1 Tbsp amounts randomly around the pancake's uncooked side.
Let the pancake cook another minute and turn it over.
Cook the pancake for a few more minutes. The fruit and pancake stay moist, but the pancake will cook. One can always lift one edge of the pancake to see how cooked the fruit and pancake are before serving. Remember, it will be moist and delicious.
Talk about good. These pancakes are good eating.
